White Chocolate Peppermint Cookies

INGREDIENTS

White Chocolate Peppermint Cookies

  • 3/4 C. (175 mL) Crisco® Golden All-Vegetable Shortening
  • 1/2 C. (125 mL) firmly packed brown sugar
  • 1/2 C. (125 mL) sugar
  • 1 Tbsp. (15 mL) pure vanilla extract
  • 1 large egg
  • 1 3/4 C. (425 mL) all-purpose flour
  • 1/2 tsp. (2 mL) salt
  • 3/4 tsp. (4 mL) baking soda
  • 1 C. (250 mL) white chocolate chips
  • 1/4 C. (50 mL) crushed peppermint candy canes or peppermint candies

DIRECTIONS

  1. Preheat oven to 350ºF (180ºC). Line cookie sheets with parchment paper.
  2. Beat shortening, brown sugar, sugar and vanilla in large bowl of electric mixer on medium speed until well blended. Beat in egg.
  3. Combine flour, salt and baking soda. Mix into shortening mixture at low speed just until blended. Stir in white chocolate chips. Shape mixture into 1″ (2.5cm) balls. Place balls 2″ (5cm) apart on prepared baking sheets.
  4. Bake for 8 to 10 minutes or until lightly browned. Do not overbake. Immediately sprinkle with about 1/4 tsp. (1 mL) of crushed candy. Cool for 2 minutes. Remove to wire rack to cool completely.
