Tomato Bruschetta

INGREDIENTS

Tomato Bruschetta

  • 1 baguette, sliced into 1/2” (1.3 cm) thick pieces (about 18 slices)
  • 1/4 C. (50 mL) Crisco® Pure Vegetable Oil or Crisco® Pure Canola Oil
  • Topping
  • 3 C. (750 mL) chopped fresh tomatoes (about 4 to 5)
  • 2 cloves garlic, minced
  • 1 tsp. (5 mL) dried oregano
  • 1/4 C. (50 mL) Crisco® Pure Vegetable Oil or Crisco® Pure Canola Oil
  • salt and pepper to taste
  • 1 C. (250 mL) grated mozzarella cheese

DIRECTIONS

  1. Preheat oven to broil
  2. Brush bread with oil. Place on baking sheet. Broil for 2 to 3 minutes. Reserve.
  3. Combine topping ingredients in large bowl. Cover and let sit at room temperature for 1 hour.
  4. Preheat oven to 350ºF (180ºC). Top toasted bread slices with mozzarella and then top with 1 Tbsp. (15 mL) tomato mixture.
  5. Bake in preheated oven for 10 minutes. Serve warm or at room temperature.
