Stuffed Mushrooms

INGREDIENTS

Stuffed Mushrooms

  • 12 large mushrooms, stems removed and chopped (keep mushroom caps)
  • 1/4 C. (50 mL) Crisco® Pure Vegetable Oil or Crisco® Pure Canola Oil, divided
  • 1/2 C. (125 mL) green onions, chopped (approx. 6)
  • 2 cloves garlic, chopped
  • 3/4 C. (175 mL) breadcrumbs, preferably Panko breadcrumbs
  • 1/2 C. (125 mL) Parmesan cheese
  • 1/2 tsp. (2 mL) salt
  • 1/4 tsp. (1 mL) pepper

DIRECTIONS

  1. Preheat oven to 350°F (180°C). Line a baking sheet with parchment paper.
  2. Heat 3 Tbsp. (45 mL) oil in large skillet on medium heat. Cook chopped mushroom stems, green onions and garlic for 5 minutes or until tender. Cool for 10 minutes.
  3. In a separate bowl, combine cooled mixture with remaining ingredients.
  4. Place mushroom caps on prepared baking sheet. Brush with remaining 1 Tbsp. (15 mL) oil and fill with cooled mixture.
  5. Bake in preheated oven for 20 minutes.
