Spinach and Caramelized Onion Dip

INGREDIENTS

Spinach and Caramelized Onion Dip

  • 3 Tbsp. (45 mL) Crisco® Pure Vegetable Oil or Crisco® Pure Canola Oil
  • 2 onions, chopped
  • 2 cloves garlic, chopped
  • 1/4 tsp. (1 mL) red pepper flakes (optional)
  • 8 C. (2 L) baby spinach, coarsely chopped
  • 1 (500 mL) container low-fat sour cream
  • 1/4 C. (50 mL) chives, chopped
  • 1/2 tsp. (2 mL) salt
  • 1/4 tsp. (1 mL) pepper

DIRECTIONS

  1. Heat oil in a large skillet on medium-high heat. Add onions but do not stir until they begin to brown. Reduce heat to medium, continue cooking for 8 to 10 minutes or until lightly browned. Add garlic, red pepper flakes and spinach. Cook until spinach is wilted, about 2 to 3 minutes. Remove from heat and cool.
  2. In a separate bowl, combine cooled mixture with remaining ingredients. Cover and refrigerate at least 1 hour.
