INGREDIENTS

  • 1 1/2 C. (375 mL) all-purpose flour
  • 2/3 C. (150 mL) granulated sugar
  • 1/2 C. (125 mL) Crisco® Pure Vegetable Oil
  • 3 Tbsp. (45 mL) milk
  • 2 eggs, slightly beaten
  • 1 C. (250 mL) mashed ripe bananas
  • 1/2 C. (125 mL) chopped pecans

DIRECTIONS

  1. Heat oven to 350°F (180ºC). Grease an 8″ x 4″ (20 cm x 10 cm) loaf pan. In large bowl, combine flour and sugar; mix well. Add oil, milk and eggs; blend well. Add banana and pecans; stir just until blended. Pour into greased pan.
  2. Bake at 350°F (180ºC) for 60 to 70 minutes or until top is deep golden brown and toothpick inserted in centre comes out clean. Cool in pan for 15 minutes. Remove from pan; place on wire rack. Cool for 1 hour or until completely cooled. Wrap tightly and store in refrigerator.
