Orange Marmalade Cake

INGREDIENTS

Orange Marmalade Cake

  • Cake
  • 1 C. (250 mL) Crisco® All-Vegetable Shortening
  • 1 C. (250 mL) sugar
  • 5 eggs
  • 1 Tbsp. (15 mL) pure vanilla extract
  • 1 C. (250 mL) all-purpose flour
  • 1 1/2 tsp. (7 mL) baking powder
  • 1/4 tsp. (2 mL) salt
  • 3/4 C. (175 mL) orange marmalade
  • Glaze
  • 1/2 C. (125 mL) orange marmalade
  • 2 tsp. (10 mL) water

DIRECTIONS

  1. Preheat oven to 350ºF (180ºC). Grease an 8″ or 9″ (2L or 2.5L) baking dish. Line with parchment paper, overlapping on 2 sides for easy removal from pan.
  2. Beat shortening and sugar until light. Add eggs one at a time, beating well after each addition. Add vanilla. Add flour and baking powder. Beat in marmalade, just until combined. Place batter in prepared baking dish.
  3. Bake in preheated oven for 40 minutes or until a toothpick inserted in center of cake comes out clean.
  4. Heat marmalade and water in a small saucepan. Brush on warm cake. Serve warm or at room temperature.
