New England Clam Chowder

INGREDIENTS

New England Clam Chowder

  • 2 cans (142 g) whole baby clams, drained, juices reserved
  • 3 Tbsp. (45 mL) Crisco® All-Vegetable Shortening
  • 2 onions, peeled and thinly sliced
  • 2 stalks celery, thinly sliced
  • 1 1/2 lbs (750 g) potatoes, peeled, quartered and thinly sliced
  • 1 can (354 mL) evaporated milk
  • 2 C. (500 mL) water
  • 1 tsp. (5 mL) salt
  • 1/4 tsp. (1 mL) ground white pepper
  • 2 Tbsp. (30 mL) chopped fresh parsley

DIRECTIONS

  1. Melt shortening in a large heavy saucepan over medium heat. Add onions, celery and potatoes. Cook and stir for 5 minutes. Add evaporated milk, reserved clam juices and water. Bring to a boil.
  2. Reduce heat. Simmer, covered, for 15 to 20 minutes or until potatoes are tender. Stir in clams. Cook for 2 to 3 minutes.
  3. Stir in salt, pepper and parsley.
