INGREDIENTS

  • Crust
  • 19 oz (400 g) chocolate wafer cookies, crushed
  • 1/4 C. (50 mL) sugar
  • 1/4 C. (50 mL) Crisco® Golden All-Vegetable Shortening
  • Filling
  • 1/2 gallon (1.89 L) mint chocolate chip ice cream, softened but not melted
  • 1/4 C. (50 mL) hot fudge topping

DIRECTIONS

  1. Preheat oven to 350° F (175ºC).
  2. Crust: In a medium mixing bowl, stir together cookie crumbs and sugar. With a pastry blender or two knives, blend in the shortening until crumbs are moistened and begin to clump together.
  3. Press mixture into the bottom of a 10″ x 11″ (25 cm x 27.5 cm) pie plate. Bake crust for 8 minutes.
  4. Let crust cool briefly, then freeze crust for about 15 minutes.
  5. Filling: Remove crust from the freezer. Using a rubber spatula, spread ice cream over crust.
  6. Warm hot fudge topping in the microwave on high power for about 45 seconds; stir, then drizzle topping onto the ice cream.
  7. Freeze pie for at least 5 hours, but preferably 24 hours.
