Irish Stew Recipe

INGREDIENTS

Irish Stew

  • 3/4 C. (175 mL) all-purpose flour
  • 1 tsp. (5 mL) salt
  • 1/2 tsp. (2 mL) black pepper
  • 3 lbs (1362 g) lamb, cut into 2-inch (5 cm) pieces
  • 3 Tbsp. (45 mL) Crisco® Pure Canola Oil
  • 1 clove garlic, minced
  • 1 onion, sliced
  • 1 C. (250 mL) carrots, cut into cubes
  • 1 C. (250 mL) turnips, cut into cubes
  • 3 C. (750 mL) potatoes, cut into cubes
  • 1 tsp. (5 mL) salt
  • 1/2 tsp. (2 mL) pepper
  • 1 tsp. (5 mL) dried thyme leaves
  • 1 tsp. (5 mL) rosemary leaves

DIRECTIONS

  1. Combine flour, salt and pepper in a re-sealable plastic bag. Add lamb pieces and toss until coated. Heat oil in Dutch oven. Brown lamb over medium-high heat. Add garlic and onion. Cook until onion is tender. Cover with boiling water. Cook over medium-low heat for 1 1/2 hours or until tender.
  2. Add carrots, turnips, potatoes, salt, pepper, thyme and rosemary. Cook for 30 minutes more or until vegetables are tender. Season to taste with salt and pepper.
