Holiday Appetizer Quiche Recipe

INGREDIENTS

Holiday Appetizer Quiche

  • Crust
  • 2 C. (500 mL) all-purpose flour
  • 1 tsp. (5 mL) salt
  • 3/4 C. (175 mL) Crisco® All-Vegetable Shortening
  • 5 to 6 Tbsp. (75 to 90 mL) cold water
  • Filling
  • 2 C. (500 mL) Swiss cheese, grated
  • 2/3 C. (150 mL) chopped ham, crumbled cooked sausage, diced pepperoni or crumbled cooked bacon
  • 3/4 C. (175 mL) thinly sliced green onions, including tops
  • 1/2 C. (250 mL) diced roasted red peppers, well drained
  • 1/4 C. (50 mL) chopped fresh parsley
  • 5 eggs
  • 2 C. (500 mL) regular, 2% or fat-free evaporated milk
  • 1 tsp. (5 mL) salt
  • 1/4 tsp. (1 mL) pepper

DIRECTIONS

  1. Preheat oven to 400ºF (200ºC). Grease or line a 10” x 15” (40 cm x 25 cm) jelly-roll pan with parchment paper.
  2. Crust: In a medium mixing bowl, combine flour and salt. Cut in shortening using pastry blender or 2 knives until all flour is blended in to form pea-size chunks. Sprinkle with water, 1 Tbsp. (15 mL) at a time. Toss lightly with fork until dough forms ball. Roll dough on a lightly floured surface to fit jelly-roll pan. Place dough in prepared pan, folding edges under. Flute edges. Prick crust with fork.
  3. Filling: Sprinkle cheese, ham, onions, parsley and red peppers evenly over crust. In a medium bowl, beat eggs, milk, salt and pepper. Pour over filled crust.
  4. Bake in preheated oven for 35 minutes or until set. Cool for 5 to 10 minutes. Cut into 2” x 1 1/2” (5 cm x 3.5 cm) pieces.
