Granola Cookies

INGREDIENTS

Granola Cookies

  • 1 C. (250 mL) sugar
  • 1/2 C. (125 mL) Crisco® Pure Canola Oil
  • 1/3 C. (75 mL) honey
  • 2 eggs
  • 1/4 C. (50 mL) water
  • 2 C. (500 mL)all-purpose flour
  • 1 3/4 C. (425 mL) quick oats
  • 1 tsp. (5 mL) baking soda
  • 1 tsp. (5 mL) salt
  • 1 tsp. (5 mL) ground Saigon cinnamon
  • 1/2 C. (125 mL) semi-sweet chocolate pieces
  • 1/2 C. (125 mL) raisins
  • 1/2 C. (125 mL) chopped nuts
  • 1/2 C. (125 mL) miniature semi-sweet
  • 1/2 C. (125 mL) flaked coconut

DIRECTIONS

  1. Preheat oven to 350ºF (180ºC). Grease or line baking sheets with parchment paper. Set aside.
  2. Mix sugar, oil, honey, eggs and water in a large mixing bowl. Add flour, oats, baking soda, salt and Ground Saigon Cinnamon. Mix well. Stir in remaining ingredients.
  3. Drop mixture by teaspoonful about 2″ (5 cm) apart onto prepared baking sheets. Bake at 350ºF (180ºC), about 10 to 12 minutes, or until almost no indentation remains when touched lightly. Cool on wire rack.
