Fudgy Brownies

INGREDIENTS

Fudgy Brownies

  • 4 ounces (125 g) unsweetened chocolate
  • 1 C. (250 mL) Crisco® Golden All-Vegetable Shortening
  • 2 C. (500 mL) sugar
  • 2 tsp. (10 mL) pure vanilla extract
  • 4 eggs
  • 1 C. (250 mL) all-purpose flour + 2 Tbsp. (30 mL)
  • dash of salt (mixed with flour)
  • Fudgy Chocolate Frosting
  • 1 C. (250 mL) heavy cream
  • 10 ounces (300 g) semi-sweet or bittersweet chocolate chips

DIRECTIONS

  1. Line a 9″ x 13″ (3 L) baking dish with foil, including ends and sides. Spray with non-stick cooking spray or grease. Preheat oven to 350ºF (180°C).
  2. Brownies: Melt chocolate and shortening together in an eight-cup (2 L) glass measuring C. in microwave for 2 minutes on high, or until shortening is melted. Stir until chocolate is melted and mixture is smooth. Mix in sugar. Add vanilla, then eggs, one at a time, stirring well after each addition. In a bowl, combine flour and salt. Mix in flour mixture, a little at a time, stirring until uniform. Spread in prepared pan and bake for 25 to 30 minutes or until a toothpick inserted in centre comes out with fudgy crumbs. Cool completely and invert on tray. Spread with frosting (directions below). When cold, cut into squares, dipping knife into hot water.
  3. Frosting: In a small saucepan, heat cream until just starting to boil. Place chips in a bowl. Pour over hot cream. Let stand for 3 minutes, then stir until smooth. Warm cream in glass measuring C. in the microwave. Let mixture come to room temperature and spreadable consistency. Spread over brownies before cutting.
