Frosty Orange Muffins

INGREDIENTS

Frosty Orange Muffins

  • Muffins
  • 2 C. (500 mL) all-purpose flour
  • 1/2 C. (125 mL) sugar
  • 1 Tbsp. (15 mL) grated orange peel
  • 3/4 C. (175 mL) orange juice
  • 1/4 C. (50 mL) Crisco® Pure Vegetable Oil
  • 1 egg
  • Topping
  • 3 oz (84 g) cream cheese, softened
  • 1/4 C. (50 mL) icing sugar
  • 1 tsp. (5 mL) grated orange peel

DIRECTIONS

  1. Heat oven to 400ºF (200ºC). Grease 12 muffin cups. In a medium bowl, combine flour, sugar and 1 Tbsp. (15 mL) of grated orange peel; mix well.
  2. In a small bowl, combine orange juice, oil and egg; blend well. Add to flour mixture; stir just until dry ingredients are moistened. (Batter will be slightly lumpy.) Fill greased muffin C. 2/3 full.
  3. Bake at 400ºF (200ºC) for 18 to 20 minutes or until golden brown.
  4. Meanwhile, combine all topping ingredients; blend well.
  5. Remove muffins from muffin cups. Cool for 10 minutes. Spread topping on each muffin. Serve warm. Store in refrigerator.
