Flattened Chicken with Salsa Verde

INGREDIENTS

Flattened Chicken with Salsa Verde

  • Marinade for Chicken
  • 4 chicken breasts, boneless and skinless
  • 3 Tbsp. (45 mL) Crisco® Pure Canola Oil or Crisco® Pure Vegetable Oil
  • 2 Tbsp. (30 mL) lemon juice
  • 2 cloves garlic, minced
  • 1/2 tsp. (2 mL) ground cumin
  • 1/2 tsp. (2 mL) ground Saigon cinnamon
  • salt and pepper to taste
  • Salsa Verde:
  • 1 C. (250 mL) fresh Italian parsley
  • 1 small clove garlic, minced
  • 1/4 C. (50 mL) Crisco® Pure Canola Oil or Crisco® Pure Vegetable Oil
  • 2 Tbsp. (30 mL) Crosse and Blackwell® capers, drained
  • 1 Tbsp. (15 mL) fresh lemon juice
  • 1/2 tsp. (2 mL) salt
  • 1/4 tsp. (1 mL) pepper

DIRECTIONS

  1. Place chicken between 2 pieces of parchment or waxed paper. Pound chicken breasts so they are an even thickness.
  2. Marinade: Combine all ingredients and combine with chicken in resealable bag. Marinate for 2 hours in refrigerator. Remove from marinade and season with salt and pepper. Grill on medium-high heat, 3 to 5 minutes per side until juices run clear. Remove to serving platter.
  3. Salsa Verde: Combine all ingredients in blender. Drizzle over cooked chicken and serve.
