Crunchy Fried Fish

INGREDIENTS

Crunchy Fried Fish

  • 2 lbs (1 kg) fresh or frozen fish fillets, thawed
  • Crisco® Pure Vegetable Oil for frying
  • 3/4 C. (175 mL) all-purpose flour
  • 2 tsp. (10 mL) salt
  • 3 egg yolks, beaten
  • 6 Tbsp. (90 mL) water
  • 3 Tbsp. (45 mL) Crisco® All-Vegetable Shortening, melted
  • 3 (3) egg whites, stiffly beaten
  • 3/4 C. (175 mL) all-purpose flour, seasoned with salt and pepper

DIRECTIONS

  1. Thaw fish if frozen. Cut into serving-size pieces if necessary. Pat dry with paper towels.
  2. Pour oil into deep fryer; heat to 365ºF (180°C).
  3. In medium bowl, combine 3/4 C. (175 mL) flour and salt. Make a well in centre of flour; add egg yolks, water and melted shortening. Stir until batter is smooth. Fold in egg whites. Dip fish in remaining 3/4 C. (175 mL) seasoned flour, then into the batter.
  4. Fry several fish pieces at a time until golden brown; drain on paper towels. Keep warm and continue with remaining fish pieces. Serve with malt vinegar, if desired.
