Crispy Herb Baked Chicken

INGREDIENTS

Crispy Herb Baked Chicken

  • Marinade
  • 1/2 C. (125 mL) Crisco® Pure Vegetable Oil
  • 1/4 C. (50 mL) vinegar
  • 1 tsp. (5 mL) dried dill
  • 1 tsp. (5 mL) dried basil
  • 1/2 tsp. (2 mL) dried thyme
  • 1/2 tsp. (2 mL) salt
  • 1/4 tsp. (1 mL) black pepper
  • 4 boneless, skinless chicken breast halves
  • Coating
  • 2/3 C. (150 mL) mashed potatoes
  • 1/3 C. (75 mL) grated Parmesan cheese
  • 2 tsp. (10 mL) dried parsley flakes
  • 3/4 tsp. (4 mL) garlic salt

DIRECTIONS

  1. Combine marinade ingredients in a re-sealable plastic bag. Add chicken, turn to coat. Marinate for 30 minutes, turning occasionally.
  2. Preheat oven to 375ºF (190ºC). Grease a baking sheet or line with parchment paper; set aside.
  3. Combine coating ingredients in a shallow dish. Remove chicken from marinade; discard marinade. Roll chicken in coating mixture; place on prepared baking sheet. Bake for 35 to 40 minutes or until topping is golden brown and juices run clear.
