Creamy Hot Reuben Dip

INGREDIENTS

Creamy Hot Reuben Dip

  • 4 Tbsp. (60 mL) Crisco® All-Vegetable Shortening
  • 1 large onion, finely diced
  • 1/2 lb (227 g) corned beef, sliced and shredded
  • 8 ounces (227 g) cream cheese
  • 1 to 1 1/2 C. (250 to 375 g) sauerkraut, drained and chopped fine
  • 2 Tbsp. (30 mL) sweet pickle relish
  • 2 Tbsp. (30 mL) dill pickle relish
  • 1/2 C. (125 mL) ketchup
  • 1/2 C. (125 mL) mayonnaise
  • 2 C. (500 mL) grated Swiss cheese

DIRECTIONS

  1. Melt shortening in a heavy 4-quart (4 L) saucepan.
  2. Add diced onion and cook until golden brown.
  3. Add corned beef and cook for 3 minutes, stirring often over medium heat. Drain excess fat.
  4. Add cream cheese in chunks, stirring after each addition.
  5. Add sauerkraut and pickle relish. Add ketchup, mayonnaise and Swiss cheese.
  6. Stir until well blended and melted. Serve in fondue pot or chafing dish with toasted mini rye triangles.
