Cooler Pressed Sandwiches

INGREDIENTS

Cooler Pressed Sandwiches

  • 1 C. (250 mL) fresh basil leaves
  • 3/4 C. (175 mL) Crisco® Pure Vegetable Oil or Crisco® Pure Canola Oil
  • 2 cloves garlic
  • 1/2 tsp. (2 mL) salt
  • 1/2 lb (227 g) assorted deli meat (smoked turkey, rare roast beef, black forest ham)
  • 1/2 lb (227 g) sliced Havarti cheese
  • 1/4 C. (50 mL) chopped sun-dried tomatoes, optional
  • 1 thin baguette, sliced lengthwise, interior crumb removed

DIRECTIONS

  1. Basil Oil: In a food processor, combine basil, garlic and salt. Combine with on/off pulses until finely chopped. Add oil and puree.
  2. Drizzle approximately 1/4 C. (50 mL) basil oil on each half of baguette. Sprinkle with sun dried tomatoes. Add deli meats and cheese.
  3. Close baguette, slice in half and wrap each piece tightly in waxed paper, then in aluminum foil.
  4. Place the sandwiches at the bottom of the cooler so the weight of the other contents presses the sandwiches and allows the flavour of the basil oil to soak into the bread.
