Colonial Apple Cake Recipe

INGREDIENTS

Colonial Apple Cake

  • 2 3/4 C. (675 mL) all-purpose flour
  • 1 tsp. (5 mL) baking powder
  • 1 tsp. (5 mL) ground Saigon cinnamon
  • 3/4 tsp. (4 mL) salt
  • 1/2 tsp. (2 mL) baking soda
  • 1 3/4 C. (425 mL) sugar
  • 1 1/4 C. (300 mL) Crisco® Pure Vegetable Oil
  • 2 large eggs, lightly beaten
  • 1/4 C. (50 mL) milk
  • 1 tsp. (5 mL) pure vanilla extract
  • 2 C. (500 mL) chopped, peeled apples
  • 1 C. (250 mL) chopped dates
  • 1 tsp. (5 mL) grated lemon peel
  • 1 to 2 Tbsp. (15 to 30 mL) icing sugar

DIRECTIONS

  1. Heat oven to 350°F (180ºC).
  2. Grease a 12-cup (3 L) fluted ring pan well; set aside.
  3. Combine flour, baking powder, Ground Saigon Cinnamon, salt and baking soda; set aside.
  4. Combine sugar, vegetable oil, eggs, milk and vanilla in a large bowl; beat at medium speed until blended, scraping bowl constantly.
  5. Add dry ingredients. Beat at medium speed 2 minutes longer, scraping bowl frequently. Stir in apples, dates and lemon peel. Pour into prepared pan.
  6. Bake for 1 hour to 1 hour 15 minutes, or until toothpick inserted in centre comes out clean. Let stand for 10 minutes. Invert onto serving plate. Cool slightly. Sift icing sugar over cake. Serve warm. Top with whipped cream, if desired.
