Citrus Cake

INGREDIENTS

Citrus Cake

  • 2 C. (500 mL) sugar
  • 4 eggs
  • 3/4 C. (175 mL) Crisco® Vegetable Oil or Crisco® Pure Canola Oil
  • 1 C. (250 mL) orange juice
  • 1 tsp. (5 mL) pure vanilla extract
  • 2 C. (500 mL) all-purpose flour
  • 2 tsp. (10 mL) baking powder
  • 1/2 tsp. (2 mL) salt
  • 1 Tbsp. (15 mL) orange zest (optional)
  • icing sugar for dusting

DIRECTIONS

  1. Preheat oven to 350ºF (180ºC). Grease a 10” (4 L) tube pan.
  2. Beat sugar and eggs until well combined. Add oil, orange juice and vanilla. Beat well. Add flour, salt and baking powder. Beat until just combined. Pour into prepared pan.
  3. Bake in preheated oven for 55 to 60 minutes until a toothpick inserted in center of cake comes out clean. Cool and dust with icing sugar before serving.
