Chocolate-Chocolate Chip Cake

INGREDIENTS

Chocolate-Chocolate Chip Cake

  • 1/2 stick (1/2 cup) Crisco® All-Vegetable Shortening Sticks
  • 2/3 C. (150 mL) sugar
  • 2 large eggs, lightly beaten
  • 1/2 C. (125 mL) chocolate syrup
  • 1/4 C. (50 mL) sour cream or unflavoured yogurt
  • 1/2 tsp. (2 mL) pure vanilla extract
  • 1 C. (250 mL)all-purpose flour
  • 1/2 C. (125 mL) miniature chocolate chips
  • 3/4 tsp. (4 mL) baking powder
  • 1/4 tsp. (1 mL) salt
  • icing sugar

DIRECTIONS

  1. Heat oven to 350ºF (180ºC). Grease an 8″ (2 L) square baking dish and line it with parchment paper, with the edges extending on two sides to form handles (for easy removal).
  2. In a large bowl, combine shortening, sugar, eggs, chocolate syrup, sour cream and vanilla. Add flour, chocolate chips, baking powder and salt. Beat at the low speed of an electric mixer until blended, scraping the bowl constantly. Then beat at medium speed for 1 minute, scraping the bowl occasionally. Pour into the prepared pan.
  3. Bake in preheated oven for 40 to 45 minutes, or until wooden pick inserted in centre comes out clean. Cool completely. Sift icing sugar over cake or frost as desired.
