Chicken Salad with Orzo and Artichokes

INGREDIENTS

Chicken Salad with Orzo and Artichokes

  • Dressing
  • 6 Tbsp. (90 mL) Crisco® Pure Vegetable Oil
  • 3 Tbsp. (45 mL) white wine vinegar
  • 1 1/2 tsp. (7 mL) fresh lemon juice
  • 1 1/2 tsp. (7 mL) Dijon-style mustard
  • salt and freshly ground black pepper, to taste
  • Salad
  • 3 C. (750 mL) diced cooked chicken
  • 1/2 C. (125 mL) orzo pasta, cooked according to package directions
  • 1 C. (250 mL) cherry tomatoes, halved
  • 4 green onions, thinly sliced
  • 1 6 oz (170 g) jar of marinated artichoke hearts, core removed, sliced into thick slices

DIRECTIONS

  1. Whisk together all dressing ingredients; season with salt and pepper.
  2. Combine the chicken, cooked orzo, tomatoes, green onions and artichoke hearts; toss with dressing to combine.
  3. Season salad with salt and pepper to taste; serve.
