Cashew Scotchies Recipe

INGREDIENTS

Cashew Scotchies

  • 1 C. (250 mL) all-purpose flour
  • 1/2 tsp. (2 mL) baking powder
  • 1/4 tsp. (1 mL) salt
  • 1/2 C. (125 mL) Crisco® Golden All-Vegetable Shortening
  • 1 1/4 C. (300 mL) packed brown sugar
  • 1 tsp. (5 mL) pure vanilla extract
  • 2 large eggs
  • 2 C. (500 mL) chopped cashews, divided
  • 1 C. (250 mL) butterscotch chips

DIRECTIONS

  1. Heat oven to 350°F (180ºC). Line a 9″ (2 L) square baking pan with foil, extending foil over edges. Grease or coat foil lightly with non-stick cooking spray.
  2. Combine flour, baking powder and salt in a medium bowl.
  3. Melt shortening in large saucepan over low heat. Remove from heat. Add flour mixture, brown sugar, vanilla and eggs. Mix well. Stir in 1 1/2 C. (375 mL) cashews and butterscotch chips. Spread batter in prepared pan. Sprinkle 1/2 C. (125 mL) cashews evenly on top, pressing lightly into batter.
  4. Bake for 30 to 35 minutes or until golden brown and toothpick inserted in centre comes out clean. Cool completely. Remove by lifting foil from pan. Cut into bars.
