Beef Noodle Soup

INGREDIENTS

Beef Noodle Soup

  • 2 Tbsp. (30 mL) Crisco® Pure Vegetable Oil
  • 1/2 lb (250 g) boneless beef sirloin steak, cut into thin strips
  • 1 onion, chopped
  • 1 Tbsp. (15 mL) all-purpose flour
  • 4 C. (1 L) beef or chicken broth
  • 3 C. (750 mL) water
  • 1 1/4 C. (300 mL) dry vermicelli or very fine egg noodles
  • salt and pepper
  • 1/4 C. (50 mL) chopped green onion

DIRECTIONS

  1. Heat oil in 3-quart (3 L) saucepan. Add beef. Cook over medium-high heat until beef is browned.
  2. Add onion and garlic. Cook, stirring occasionally, for about 2 minutes, or until onion is tender. Stir in flour.
  3. Add broth. Heat to boiling, stirring occasionally. Add pasta and reduce heat to medium. Cook for about 8 minutes or until pasta is tender. Season with salt and pepper. Stir in green onions.
