Banana Bumblebees Recipe

INGREDIENTS

Banana Bumblebees

  • Muffins
  • 4 ripe bananas, mashed
  • 3/4 C. (175 mL) sugar
  • 1/2 C. (125 mL) Crisco® Pure Canola Oil
  • 2 eggs
  • 2 1/2 C. (625 mL) all-purpose flour
  • 1 Tbsp. (15 mL) baking powder
  • 1 tsp. (5 mL) baking soda
  • 1/4 tsp. (1 mL) salt
  • Topping
  • gel or paste food colour
  • 1 container (450 g) prepared vanilla frosting
  • 12 (12) large yellow gumdrops
  • 1/2 C. (125 mL) prepared chocolate frosting
  • 24 miniature chocolate chips
  • 12 semi-sweet chocolate chips
  • 12 large white gumdrops
  • black string licorice

DIRECTIONS

  1. Preheat oven to 375ºF (190ºC). Grease a 12 C. muffin pan or line with paper liners.
  2. Muffins: Mash bananas in a large mixing bowl. Add sugar, eggs and oil. Mix well. Combine dry ingredients and stir into banana mixture, just to moisten. Spoon into muffin cups. Bake in preheated oven for 20 to 25 minutes or until a toothpick inserted into centre comes out clean. Cool for 5 minutes. Remove from pan. Cool on wire rack for 30 minutes or until completely cool.
  3. Topping: Add food colour to vanilla frosting, blend well. Frost tops of muffins.
  4. Bees: Cut yellow gumdrops in half crosswise. Use rounded pieces for heads; flatten remaining pieces into ovals for bodies. Place on cupcakes. Place chocolate frosting in small resealable food storage bag; seal bag. Cut small hole in bottom corner of bag. Squeeze bag to pipe stripes on each gumdrop body to resemble bumblebees. Place 1 chocolate chip on one end of each gumdrop body for stinger; place 2 miniature chocolate chips on opposite end for eyes. Cut white gumdrops in half lengthwise. Insert 2 gumdrop halves on edge of each gumdrop to resemble wings. Insert small pieces of string licorice into gumdrop heads for antennae.
