Balsamic Yogurt Cucumber Salad Recipe

INGREDIENTS

Balsamic Yogurt Cucumber Salad

  • 1 C. (250 mL) plain yogurt
  • 3 to 4 cloves garlic, finely minced
  • 2 Tbsp. (30 mL) Crisco® Pure Canola Oil 
  • 1 Tbsp. (15 mL) white balsamic vinegar
  • 1 tsp. (5 mL) salt
  • 1/2 tsp. (2 mL) freshly ground black pepper
  • 2 cucumbers, peeled, seeded, and cut into 1/2” (1.3 cm) pieces 
  • 1/4 C. (50 mL) torn fresh mint

DIRECTIONS

  1. Combine the dressing ingredients; whisk to combine. Add cucumbers; toss to coat.
  2. Refrigerate for 4 to 6 hours to develop flavours. Garnish with mint; serve.
