Avocado Salad Wraps

INGREDIENTS

Avocado Salad Wraps

  • Dressing
  • 1 avocado, ripe
  • 1/4 C. (50 mL) Crisco® Pure Canola Oil or Crisco® Pure Vegetable Oil
  • 1/4 C. (50 mL) lime juice
  • 2 cloves garlic, minced
  • 1/2 tsp. (2 mL) salt
  • Salad Filling
  • 4 C. (1 L) salad greens
  • 1/2 C. (125 mL) goat cheese or feta, crumbled
  • 1 small red onion, sliced
  • 4 large whole wheat tortillas (approx 10”/23 cm)
  • 8 (250 g) roast turkey slices, or your favourite deli meat (optional)
  • 1 avocado, ripe, sliced in 8

DIRECTIONS

  1. Dressing: Place ingredients in food processor. Process until smooth. Reserve.
  2. Filling: Combine salad greens, goat cheese and red onion. Toss with reserved dressing.
  3. Place tortillas on flat surface. If using roast turkey, place 2 slices onto tortillas. Divide salad mixture between 4 tortillas and place on top of turkey. Place 2 slices of avocado on top of each one. Roll up tortillas, slice in half and serve.
