Aunt Lois’ Banana Nut Bread Recipe

INGREDIENTS

Aunt Lois’ Banana Nut Bread

  • 1 1/2 C. (375 mL) all-purpose flour
  • 3/4 tsp. (4 mL) baking soda
  • 1/4 tsp. (1 mL) salt
  • 1 C. (250 mL) sugar
  • 3/4 C. (175 mL) Crisco® Pure Vegetable Oil
  • 3 Tbsp. (45 mL) buttermilk
  • 2 eggs, beaten
  • 1 C. (250 mL) mashed ripe bananas
  • 1/2 C. (125 mL) chopped pecans

DIRECTIONS

  1. Heat oven to 325ºF (160ºC) Grease and flour bottom only of 8” x 4” or 9” x 5” (22.5 cm x 12.5 cm) loaf pan. In a large bowl, combine flour, baking soda and salt; mix well.
  2. Add sugar, oil, buttermilk and eggs; blend well. Add bananas and pecans; mix well. Pour batter into greased and floured pan.
  3. Bake at 325ºF (160ºC) for 1 1/4 to 1 1/2 hours or until toothpick inserted in center comes out clean. Cool in pan 15 minutes. Remove from pan; place on wire rack. Cool 1 hour or until completely cooled. Wrap tightly and store in refrigerator.
