Artichoke Cheese Appetizers

INGREDIENTS

Artichoke Cheese Appetizers

  • 20 to 24 appetizer-size rye bread slices 
  • 2 Tbsp. (30 mL) Crisco® All-Vegetable Shortening, melted 
  • 1 can (14 oz/398 mL) artichoke hearts, drained, halved and patted dry
  • 1/3 C. (75 mL) mayonnaise
  • 3/4 C. (175 mL) grated Cheddar cheese
  • 1/4 C. (50 mL) grated Parmesan cheese
  • 1/4 C. (50 mL) chopped green onion or red pepper
  • salt and pepper
  • paprika

DIRECTIONS

  1. Heat oven to 400ºF (200°C).
  2. Brush bread slices with melted shortening and place on an ungreased or parchment-lined cookie sheet.
  3. In a food processor, chop artichokes until coarse. Add mayonnaise, Cheddar cheese, Parmesan cheese, onion or pepper and salt and pepper to taste. Blend until combined but not puréed.
  4. Spoon about a Tbsp. mound of artichoke mixture over bread slices. Sprinkle with paprika.
  5. Bake at 400ºF (200°C) for 10 to 12 minutes or until golden brown. Serve hot or warm.
