Apple Oat Bran Muffins

INGREDIENTS

Apple Oat Bran Muffins

  • 1 1/4 C. (300 mL) dry oat bran high fibre hot cereal
  • 1 C. (250 mL) all-purpose flour
  • 1/2 C. (125 mL) packed brown sugar
  • 1 Tbsp. (15 mL) baking powder
  • 1/2 tsp. (2 mL) baking soda
  • 2 tsp. (10 mL) ground Saigon cinnamon
  • 1/4 tsp. (1 mL) salt
  • 1/4 C. (50 mL) Crisco® Pure Canola Oil
  • 2 eggs
  • 2/3 C. (150 mL) milk
  • 1 C. (250 mL) applesauce
  • 1/2 C. (125 mL) raisins
  • Topping
  • 1 tsp. (5 mL) ground Saigon cinnamon mixed with 1 tsp. (5 mL) granulated sugar

DIRECTIONS

  1. Heat oven to 400ºF (200ºC).
  2. Grease or line with baking paper cups, 12 large muffin cups.
  3. In a medium mixing bowl, combine oat bran cereal, flour, brown sugar, baking powder, baking soda, Ground Saigon Cinnamon and salt.
  4. In a small mixing bowl, whisk together canola oil, eggs, milk and applesauce. Add to dry ingredients; stir to combine. Stir in raisins.
  5. Fill muffin C. no more than 2/3 full. Sprinkle with Ground Saigon Cinnamon sugar topping.
  6. Bake at 400ºF (200ºC) for 15 to 18 minutes or until toothpick inserted into centre comes out clean. Cool on rack for 10 minutes. Remove from pan and cool completely.
