Salmon Steaks with Cucumber Sauce Recipe

INGREDIENTS

Salmon Steaks with Cucumber Sauce

  • 4 salmon steaks, 1″ thick
  • 2 Tbsp. (30 mL) Crisco® Pure Canola Oil
  • 3/4 C. (175 mL) peeled, seeded and chopped cucumber
  • 1/4 C. (50 mL) finely chopped celery
  • 2 Tbsp. (30 mL) chopped green onion
  • 2 Tbsp. (30 mL) all-purpose flour
  • 1 tsp. (5 mL) instant chicken bouillon granules
  • 1/8 tsp. (0.5 mL) pepper
  • 1 C. (250 mL) half-and-half
  • 1 large egg yolk, slightly beaten

DIRECTIONS

  1. Turn oven to broil setting. Place salmon steaks on broiler pan. Broil 3″ to 4″ (7.5 cm to 10 cm) from heat, for 10 to 15 minutes, or until fish flakes easily with fork, turning over once.
  2. Meanwhile, heat oil in small saucepan. Add cucumber and celery. Cook and stir over moderate heat until tender-crisp. Add onion. Cook and stir 30 seconds longer. Stir in flour, bouillon granules and pepper. Blend in half-and-half. Cook, stirring constantly, for 5 to 7 minutes, or until thickened and bubbly. Blend small amount of hot mixture into egg yolk. Add back to hot mixture. Cook, stirring constantly, for 1 minute. Serve with salmon.
