Orange Cream Cheese Muffins

INGREDIENTS

Orange Cream Cheese Muffins

  • Muffins
  • 1 3/4 C. (415 mL) all-purpose flour
  • 1 1/2 tsp. (7 mL) baking powder
  • 1/4 C. (50 mL) sugar
  • 1/2 tsp. (2 mL) salt
  • 1/4 C. (50 mL) chopped nuts
  • 1 egg
  • 1/3 C. (75 mL) orange juice
  • 1/3 C. (75 mL) orange marmalade
  • 1/4 C. (50 mL) milk
  • 1/4 C. (50 mL) Crisco® Pure Vegetable Oil
  • Frosting
  • 1 1/2 oz (42 g) cream cheese, softened
  • 2 C. (500 mL) confectioners’ sugar
  • 1/4 C. (50 mL) orange marmalade
  • 1 to 2 tsp. (5 to 7 mL) milk

DIRECTIONS

  1. Preheat oven to 425°F (220ºC).
  2. Spray (bottom only) 12 muffin C. with no stick cooking spray.
  3. In a medium bowl, combine flour, baking powder, sugar and salt. Add nuts; mix well. Make a well or dip in the centre.
  4. In a separate bowl, combine egg, orange juice, marmalade, milk and oil. Add all at once to dry ingredients. Stir quickly until dry ingredients are moistened. Fill prepared muffin C. 2/3 full. Bake for 15 to 20 minutes. Cool.
  5. In the bowl of an electric mixer, combine all frosting ingredients; beat until it is the desired consistency. Frost cooled muffins.
