Crispy Dijon Chicken

INGREDIENTS

Crispy Dijon Chicken

  • 1/3 C. (75 mL) plain yogurt
  • 2 Tbsp. (30 mL) Dijon mustard
  • 1 clove garlic, minced
  • 4 boneless, skinless chicken breasts
  • 1 C. (250 mL) bread crumbs (preferably Japanese bread crumbs)
  • 1/4 C. (50 mL) Crisco® Pure Canola Oil, divided
  • 1/2 tsp. (2 mL) salt
  • 1/4 tsp. (1 mL) pepper

DIRECTIONS

  1. Preheat oven to 375ºF (190ºC). Line a baking sheet with parchment paper. Brush parchment paper with 2 Tbsp. (30 mL) of oil.
  2. Combine yogurt, mustard and garlic in a medium size bowl. Place chicken breasts in mixture and turn them to thoroughly coat in mixture.
  3. Place breadcrumbs in a shallow dish. Roll chicken breasts in breadcrumbs and coat on all sides.
  4. Place chicken breasts on prepared baking sheet. Drizzle chicken with remaining 2 Tbsp. (30 mL) of oil. Sprinkle with salt and pepper.
  5. Bake in preheated oven for 40 to 45 minutes, turning chicken over after 25 minutes to brown on both sides.
