Chocolate Cheesecake Bars

INGREDIENTS

Chocolate Cheesecake Bars

  • Brownies
  • 4 oz (125 g) unsweetened chocolate squares (4 squares)
  • 3/4 C. (175 mL) Crisco® Golden All-Vegetable Shortening
  • 1 C. (250 mL) sugar
  • 2 tsp. (10 mL) pure vanilla extract
  • 4 large eggs, lightly beaten
  • 1 C. (250 mL) all-purpose flour
  • dash of salt
  • Topping
  • 12 oz (360g) cream cheese, softened
  • 2 large eggs, lightly beaten
  • 3/4 C. (175 mL) sugar
  • 1 tsp. (5 mL) pure vanilla extract

DIRECTIONS

  1. Heat oven to 350ºF (180ºC). Grease a 13″ x 9″ (3 L) baking pan and line with parchment paper.
  2. Brownies: Place unsweetened chocolate and shortening in large, microwave-safe bowl. Heat, on high, for 2 minutes. Stir until mixture is smooth and chocolate is melted. Mix in sugar. Add Pure Vanilla Extract, then eggs one at a time, stirring well after each addition. Combine flour and salt, a little at a time, stirring until uniform. Spread in prepared pan. Bake for 15 minutes.
  3. Topping: Combine softened cream cheese, eggs, sugar and Pure Vanilla Extract; beat at medium speed until well blended. Pour evenly over top of brownie mixture. Bake for 22 to 25 minutes or until set. Place on cooling rack. Run spatula around edge of pan to loosen. Cool completely on cooling rack. Cut into 32 bars.
