Cheesy Chicken Fingers

INGREDIENTS

Cheesy Chicken Fingers

  • 1 lb (454 g) boneless, skinless chicken breasts
  • 1/3 C. (75 mL) light or regular mayonnaise
  • 1 tsp. (5 mL) Dijon mustard
  • 1 1/4 C. (300 mL) bread crumbs (preferably Panko)
  • 3/4 C. (175 mL) grated Parmesan or cheddar cheese
  • 1/3 C. (75 mL) Crisco® Pure Vegetable Oil or Crisco® Pure Canola Oil

DIRECTIONS

  1. Pat chicken dry and cut each breast into 4 or 5 strips.
  2. Combine mayonnaise and mustard in a large bowl. Add chicken pieces and combine well.
  3. Combine breadcrumbs and cheese in a separate low sided dish. Roll chicken fingers in crumbs one at a time and pat crumbs firmly into chicken.
  4. Heat oil in a large deep skillet on medium heat. Cook for 3 to 4 minutes per side until golden brown.
