Barbequed Chicken Pizza

INGREDIENTS

Barbequed Chicken Pizza

  • 2 skinless chicken breasts, trimmed and cut into 1/4 inch (5 mm) slices
  • 1/2 tsp. (2 mL) salt
  • 1/4 tsp. (1 mL) pepper
  • 3 Tbsp. (45 mL) Crisco® Pure Vegetable Oil
  • 1 onion, peeled and thinly sliced
  • 1 C. (250 mL) thinly sliced mushrooms
  • 1/2 C. (125 mL) hickory-flavored barbecue sauce
  • 1 12-inch (30 cm) pre-baked pizza crust
  • 2 C. (500 mL) shredded mozzarella cheese

DIRECTIONS

  1. Preheat oven to 450ºF (230ºC). Line baking sheet with aluminum foil or parchment paper.
  2. Heat oil in a large skillet on medium-high heat. Add chicken. Sauté for 3 minutes, or until interior is no longer pink. Remove chicken from pan with slotted spoon.
  3. Add onion and mushrooms to pan; season with salt and pepper. Sauté for 3 minutes, or until onion is translucent. Remove pan from heat.
  4. Combine chicken and vegetable mixture. Stir barbecue sauce into chicken and vegetable mixture.
  5. Place pizza crust on prepared baking sheet. Arrange half of the cheese on the pizza crust. Top with chicken mixture. Top chicken with remaining cheese.
  6. Bake in preheated oven for 12 to 15 minutes, or until crust is crisp and cheese is melted. Let stand for 3 minutes before cutting. Serve immediately.
