Apple Pie in Cheddar Crust

  • Cheddar Cheese Pastry

  • 2 cups 500 mL Robin Hood® Original All Purpose Flour
  • 1 cup 250 mL shredded sharp cheddar cheese
  • 1/2 tsp 2 mL salt
  • 2/3 cup 150 mL Crisco® All-Vegetable Shortening
  • 6 tbsp 90 mL ice cold water
  • Apple Filling

  • 7 cups 1.75 L peeled and sliced tart cooking apples
  • 1/3 cup 75 mL packed light brown sugar
  • 1/3 cup 75 mL sugar
  • 2 tbsp 30 mL Robin Hood Original All Purpose Flour
  • 1 tsp 5 mL ground cinnamon
  • 1/4 tsp 1 mL ground nutmeg
  • 1/4 tsp 1 mL salt
  • 2 tbsp 30 mL butter or margarine
  • Glaze

  • 1 large egg white
  • 1 tbsp 15 mL water


  1. Heat oven to 400ºF (200ºC).
  2. Cheddar Cheese Pastry: Combine flour, cheddar cheese, and salt in a large bowl. Cut in shortening with pastry blender or 2 knives until mixture resembles coarse crumbs. Add cold water, 1 tablespoon (15 mL) at a time, mixing until dry ingredients are moistened and dough can be gathered into a ball. Divide dough almost in half. Roll out larger half to a 13" (33 cm) circle on a lightly floured surface. Line a 9" (23 cm) pie plate with pastry. Trim edge to 1/2" (1 cm) beyond rim of pie plate.
  3. Apple Filling: Combine apples, brown sugar, sugar, flour, cinnamon, nutmeg, and salt in a large bowl; mix well. Arrange in the unbaked pie shell. Dot with butter. Roll out remaining pastry to an 11" (28 cm) circle. Place top crust over apples and trim edge to 1" (2.5cm) beyond rim of pie plate. Fold top crust under lower crust and form a ridge. Flute edge. Cut slits for steam to escape.
  4. Glaze: Combine egg white and water. Brush over crust. Bake at 400ºF (200ºC) for 50 to 60 minutes or until apples are tender and crust is golden brown. Cool on a rack.
  5. Serve warm or cold with scoops of ice cream or slices of cheddar cheese.
