Avocado Salad Wraps

Makes: 4 large tortilla wraps

Ingredients

  • Dressing

  • 1 avocado, ripe
  • 1/4 cup 50 mL Crisco® Canola or Vegetable Oil 
  • 1/4 cup 50 mL lime juice
  • 2 cloves garlic, minced
  • 1/2 tsp 2 mL salt
  • Salad Filling

  • 4 cups 1 L salad greens
  • 1/2 cup 125 mL goat cheese or feta, crumbled
  • 1 small red onion, sliced
  • 4 large whole wheat tortillas (approx 10”/23 cm)
  • 8 250 g roast turkey slices, or your favourite deli meat (optional)
  • 1 avocado, ripe, sliced in 8

Preparation

  1. Dressing: Place ingredients in food processor. Process until smooth. Reserve.
  2. Filling: Combine salad greens, goat cheese and red onion. Toss with reserved dressing.
  3. Place tortillas on flat surface. If using roast turkey, place 2 slices onto tortillas. Divide salad mixture between 4 tortillas and place on top of turkey. Place 2 slices of avocado on top of each one. Roll up tortillas, slice in half and serve.

Tips

  • Omit deli meat for a vegetarian wrap.
  • Grill wrap before serving.
