Apple Oat Bran Muffins

Ingredients

  • 1 1/4 cups 300 mL dry oat bran high fibre hot cereal
  • 1 cup 250 mL Robin Hood® Original All Purpose Flour 
  • 1/2 cup 125 mL packed brown sugar
  • 1 tbsp 15 mL baking powder
  • 1/2 tsp 2 mL baking soda
  • 2 tsp 10 mL ground cinnamon
  • 1/4 tsp 1 mL salt
  • 1/4 cup 50 mL Crisco® Canola Oil 
  • 2 eggs
  • 2/3 cup 150 mL milk
  • 1 cup 250 mL applesauce
  • 1/2 cup 125 mL raisins
  • Topping

  • 1 tsp 5 mL ground cinnamon mixed with 1 tsp (5 mL) granulated sugar

Preparation

  1. Heat oven to 400ºF (200ºC).
  2. Grease or line with baking paper cups, 12 large muffin cups.
  3. In a medium mixing bowl, combine oat bran cereal, flour, brown sugar, baking powder, baking soda, cinnamon and salt.
  4. In a small mixing bowl, whisk together canola oil, eggs, milk and applesauce. Add to dry ingredients; stir to combine. Stir in raisins.
  5. Fill muffin cups no more than 2/3 full. Sprinkle with cinnamon sugar topping.
  6. Bake at 400ºF (200ºC) for 15 to 18 minutes or until toothpick inserted into centre comes out clean. Cool on rack for 10 minutes. Remove from pan and cool completely.
