Cheesy Chicken Fingers

Bread strips of chicken with a tasty combination of breadcrumbs and parmesan cheese. Cook in a large deep skillet until golden brown. For convenience, you can bread chicken fingers ahead of time and refrigerate until ready to cook.

Makes: 10 chicken fingers


  • 1 lb 454 g boneless, skinless chicken breasts
  • 1/3 cup 75 mL light or regular mayonnaise
  • 1 tsp 5 mL Dijon mustard
  • 1 ¼ cups 300 mL bread crumbs (preferably Panko)
  • 3/4 cup 175 mL grated Parmesan or cheddar cheese
  • 1/3 cup 75 mL Crisco® Vegetable or Canola Oil


  1. Pat chicken dry and cut each breast into 4 or 5 strips.
  2. Combine mayonnaise and mustard in a large bowl. Add chicken pieces and combine well.
  3. Combine breadcrumbs and cheese in a separate low sided dish. Roll chicken fingers in crumbs one at a time and pat crumbs firmly into chicken.
  4. Heat oil in a large deep skillet on medium heat. Cook for 3 to 4 minutes per side until golden brown.


  • You can bread these chicken fingers up to 4 hours ahead of time. Place in a single layer and refrigerate until ready to use.
